Come to The Resiliency Institute’s Fermentation Fest on Sunday, August 26th to taste innovative locally crafted fermented brews, savor fermented appetizers, listen to live music, bid on silent auction items, and have fun!

We’ve got an amazing event planned with local fermented brews like mead, gruit, tepache, sodas, kombucha, and ale, plus fermented food, a silent auction, live music by JD Kostyk and a fermentation presentation by our Bioregional Herbalism instructor, Ellyn Schmitz. All of this is included with your ticket. This is a special event where in one place you can experience a diversity of locally brewed beverages using wild harvested and local fruits, herbs, and honey.

Fermented beverages are also being locally crafted and generously donated by Oaken Shell Meadery, Werk Force Brewing Co., and Scratch Brewing Company. Be sure to meet the brewers and offer feedback on their brews and learn a bit about them.


Ashley Johnson of Pain de Chicago has been busy fermenting local fruits, vegetables and grains to make delectable fermented appetizers to tempt your taste buds. Thank you to her and to Joliet Junior College for donating kitchen space. Local vegetables were donated by Broad Branch Farm and Creekside Natural Farms.


Bid on some interesting “fermentation” themed products and services at our silent auction and attend a Fermentation presentation to learn the history and how-to of fermenting yourself. Taste some samples of Kvass, kombucha, and another special treat.
